12 oz. sausage, cut in 1 in. slices. Put 1/2 c. water in pan with sausage and cover and cook 5 min. Add onion, sliced; green pepper, sliced; and cook until tender. (I slice mine big) Add 1 can diced tomatoes, 1 c. beef broth, 1 8oz. can chunk pineapple (drain and reserve the juice). Bring to a boil. Gradually mix reserved pineapple juice into 2 T. cornstarch and add to sausage mixture. Simmer to thicken. Add 1/4 tsp. garlic powder and pepper each and 1 T. brown sugar. Serve over rice. I love the color of this!
Oh my goodness! I saw some instructions the other day on one of the blogs I follow for the most amazingly colorfully fun cake! I think your kids would totally LOVE this one! click here for the complete tutorial and pictures... but the basic idea is to use to two box cake mixes (white cake) that you either use the box instructions to mix up (or if you want a "diet" version you can use 12 oz diet sprite for each box mix instead of the oil, water and eggs) Then divide the cake batter into six bowls, color using gel food coloring (more intense color than the liquid version) the drop the colored batter into the cake pans. The cake turns out very very colorful. So fun!
1 large container of cottage cheese 1 finely chopped red pepper 1 finely chopped yellow pepper 1 finely chopped red onion 1 cup shredded carrots 1/2 cup finely chopped celery 1 can pineapple tidbits
Mix all ingredients and let it set overnight. Serve with blue tortilla chips. Very colorful, and so fresh and good.

1 Small Bottle of Italian Dressing
1 Small Red Onion
2 Cucumbers
1 Green Pepper
4 Tomatoes
1/2 Bottle of Salad Supreme
Cook the Spaghetti, drain and cool.
Dice all of the Vegi's
Mix everything together and Enjoy!
