3 Summer Dinners
So, it's almost summertime. It's hot outside. I don't want to turn on the oven. I've been playing all day. So I need something easy, too. Let's post 3 meals that we prefer to eat on days like this!
1. Tacos: no hard shells in our family, just flour tortillas and hamburger with the taco seasoning packet.
2. Fettucini Primavera: brocolli, tomatoes, green peppers, onions, zuchinni, squash, basil, (all preferably from the garden) sauteed in tons of butter and mixed together with pasta.
3. Grilled Chicken: will someone please remind me to get the chicken out of the freezer sooner!
1. angel hair pasta tossed with olive oil, parmesan cheese with fresh tomatoes and garlic salt. mmmmmm....
2. bowtie pasta chicken salad - bowtie pasta (naturally) chicken, cooked and cut up into bite-sized peices (you can cook it easily by putting it into a glass 9x13 with some water, cover with saran and microwave for 15 min), chop up celery and chop red grapes in halves. mix up mayo and milk with a little bit of sugar. I don't measure, but proportions are basically 2 parts may to 1 part milk. And I start with maybe 1/5 cup of sugar and add to taste. (you don't want it to be super sweet) toss altogether. It's yummy. trust me.
3. caprese salad - garden tomatoes, fresh mozzarella, olive oil and balsamic vinegar. salt and pepper to taste. If you need something more substantial, toss it with some kind of pasta.
(are you sensing a theme here? Apparently, I'm all about the pasta)
1. Taco Tuesdays: there's the old taco standby, but we also like a pkg of spanish rice cooked with salsa instead of tomatoes. After the rice is cooked and tender mix in a can of black beans rinsed and drained, and some corn, serve on a tortilla with a little sourcream and cheese
2. Ham fried Rice: I just found canned ham which works well for this meal, and then its on hand when I need it. We just put rice, cooked and cooled, garlic, green onions, a couple eggs, a little soy sauce, and toss in some peas at the end.
3. Any thing grilled, I love premade hamburger patties cause you can cook them straight from the freezer.

1 - Pasta salad: Wacky mac, cheddar cheese chunks, sprinkled parmesan cheese, pepperoni, olives, tomatoes, and Italian dressing.
